Sausage, Collards, and Black-Eyed Pea Soup

with Parmesan Cheese Toasts

Directions

Step 1: Soak peas in water overnight according to package directions; drain.

Step 2: Cook sausage in hot oil in a Dutch oven over medium heat 5 minutes or until browned; add garlic and collards.

Step 3: Sauté 5 minutes or until collards begin to wilt; add broth, water, pepper, tomatoes and peas.

Step 4: Bring to a boil; cover, reduce heat, and simmer 35 minutes or until peas are tender, adding more water, if needed.


SIDE DISH DIRECTIONS

Step 1: Preheat broiler. Place baguette slices on a baking sheet; drizzle with oil, and top with cheese.

Step 2: Broil 30 seconds to 1 minute or until cheese is melted and browned.

1/2 lb dried black eyed peas1 (12-oz) pkg kielbasa or any kind of Sausage you prefer, sliced2 Tbsp olive oil2 cloves garlic, minced1 small bunch collard greens, trimmed and chopped4 cups chicken broth2 cups water1/2 tsp pepper(Optional) 1 (28-oz.) can diced tomatoes-------------------------------------------------------------------------------------------------------------SIDE DISH INGREDIENTS1 (12-oz) French baguette, cut into 1/2 inch thick slices2 Tbsp olive oil1/3 cup freshly grated Parmesan cheese
