Tzatziki

Tzatziki

1. Put the grated cucumber in a strainer and sprinkle salt on top. Mix well and let the liquid drain for 5 minutes. Wrap cucumber in a tea towel and squeeze out excess liquid.

2. Place the drained cucumber in a bowl with the garlic, oil, and fresh mint.

3. Stir in the yogurt and add black pepper and salt to taste.

4. Let the sauce sit in the refrigerator for at least 10 minutes for the flavors to develop. It will keep for about 3 days in the fridge.

3 oz. Cucumber, grated1 tbsp Fresh Mint (Optional), finely chopped or ground black pepper, to taste2 Garlic Cloves, finely chopped1 cup (61⁄3 oz.) Greek Yogurt (4% fat)
