Directions
Step 1: Preheat grill to medium-high heat. Combine 2 Tbsp lime juice, vinegar, honey, and 1 Tbsp oil; brush onto pork.
Step 2: Sprinkle pork with 1/2 tsp each salt and pepper. Brush peaches with 1 Tbsp oil; sprinkle with 1/4 tsp each salt and pepper.
Step 3: Grill pork, covered, 3 to 4 minutes per side or until done. Grill peaches, cut sides down and covered, 4 minutes or until tender.
Step 4: Coarsely chop peaches; toss with mint, shallot, and 1 Tbsp lime juice. Serve salsa over pork.
SIDE DISH DIRECTIONS
Step 1: Cook orzo according to package directions.
Step 2: Meanwhile, grate zest and squeeze juice from lemon. Toss together orzo, lemon zest, lemon juice, mint, oil, and 1/2 tsp each salt and pepper.
