Blueberry-Balsamic Pork Tenderloin

Directions

Step 1: Preheat oven to 425°F. Sprinkle pork with salt and pepper, if desired. Cook in hot oil in a large cast-iron skillet over medium-high heat 5 minutes or until browned, turning often.

Step 2: Carefully transfer skillet to oven, and bake 10 to 15 minutes or until a meat thermometer inserted registers 145°F. Let stand 5 minutes.

Step 3: Meanwhile, bring blueberries, garlic, honey, and vinegar to a boil in a saucepan over medium-high heat.

Step 4: Reduce heat to medium; simmer 3 to 4 minutes or until reduced by half and thickened. Season with salt and pepper, if desired.

Step 5: Rest the pork for 5 minutes. Slice pork; drizzle with sauce.


SIDE DISH DIRECTIONS

Step 1: Preheat oven to 425°F. Toss together green beans and oil on a large rimmed baking sheet; arrange in a single layer and bake 15 minutes or until tender. Season with salt and pepper, if desired.

Step 2: Heat potatoes according to package directions. Stir in cheese and pepper until blended.
